Aunt April's Gluten Free BakeryBack in April, I celebrated my birthday at the Wild Cow in East Nashville and had my first great birthday cake since being diagnosed with Celiac’s and having to go gluten free. Come to find out, it’s from a local bakery called Aunt April’s Gluten Free Bakery. I recently had the privilege of trying her gluten free cookies, bread, brownies and some muffins. All I have to say is YUM! The bread was the same bread used in a great sandwich I had at the Wild Cow which I used to make some sandwiches, cheesy garlic bread and well, it was so good I ate it by itself. It wasn’t spongy like most gluten free breads and didn’t fall apart like others. The cookies were nice and crunchy, the brownies moist. If you have an event or just looking for gluten free stuff around Nashville I highly recommend Aunt April’s Gluten Free Bakery’s products which can be found at the Wild Cow, Matteo’s Pizza, The Green Wagon East Nashville.

    Her cafe/bakery is now open!! Monday’s, 7 till 10 (so you can get your cup of coffee). Tuesday thorugh Saturday, 7 to 2pm. No Sundays. daily muffins, soup, sandwiches. Also, you can have fun @ the cupcake bar…. simple: pick the base cake and then pick the frosting you want. YOU get to decide the flavor combo.

    My husband and I were on vacation from Connecticut and before we left we printed out a list of G-free places for me. I was surprised and thrilled to see so many G-free places in Nashville. YAHOO!! We went to Aprils twice while on vacation. I LOVED IT !!! April is very knowledgeable about Gluten and Vegan. April is G-free herself so she knows how it works.
    There is no chance of cross contamination in her kitchen because their are no other foods allowed in there, she also has a sign posted on her door no one allowed. While we were there the UPS man came and she met him outside her door. My husband and I had some muffins, I think one of every flavor.
    They were soo….good!!! My husband who is not G-free had some G-free
    flavored coffee which I tasted and it was great! We took some muffins home with us and I matched one up to a regular muffin tin, Aprils would not fit in a reg muffin tin that’s how big they are and they do not fall apart when you eat them. This experience worked out great for me beacuse I can not have dairy either. I have not had a muffin in over a year and this was worth the wait!
